Ingredients

  • 1 tbsp. butter, softened
  • 3/4 tbsp. packed brown sugar
  • 2 tbsp. vanilla ice cream, softened
  • 1/8 tsp. ground cinnamon
  • 1/2 cup apple cider
  • 1/4 cup rum

Instructions

  1. In a mixing bowl, beat the softened butter and brown sugar until creamy.
  2. Add the softened ice cream and cinnamon, then mix until well combined.
  3. Spoon the mixture into a mason jar or resealable container and place it in the freezer until mostly hardened, for about 2 hours or until ready to serve.
  4. In a medium saucepan, heat the apple cider until it begins to boil, stirring occasionally.
  5. Remove the saucepan from the heat and pour the hot apple cider into a pitcher or easy-to-serve container.
  6. Place about 2 tablespoons of the buttered rum batter into a mug.
  7. Fill the mug about 1/3 of the way up with rum.
  8. Top the rum with the hot apple cider and stir before serving.
