Ingredients

  • 1/5 cup Whole Milk
  • 1/10 cup Heavy Whipping Cream
  • 1/4 teaspoon Ground Nutmeg
  • a pinch of Salt
  • 2 tablespoons Sugar
  • 1 large Egg Yolk
  • 1/2 teaspoon Vanilla Extract

Instructions

  1. In a saucepan, heat the milk, cream, salt, and nutmeg over medium heat until just warmed, stirring frequently.
  2. Whisk the sugar and egg yolk together in a small mixing bowl until fully combined.
  3. Take a small amount of the warmed milk mixture and pour it into the mixing bowl with the egg yolk mixture, stirring constantly until well mixed.
  4. Pour the warmed egg yolk mixture into the saucepan with the remaining milk and cream mixture. Bring the eggnog to a slow boil, whisking continuously, until the mixture reaches 160°F.
  5. Remove from heat, stir in the vanilla extract.
  6. Strain the mixture into a pitcher and refrigerate for about 2 hours to chill and thicken the eggnog.
