Ingredients
- 2 tbsp sugar or baking stevia
- 1/4 cup water
- 1/4 cup mint leaves
- 1.50 oz white rum
- 1/2 cup canned light coconut milk
- Juice of 1 lime
- 1/2 cup ice
- Garnish: handful of mint leaves, toasted coconut flakes (optional)
Instructions
- In a small saucepan, combine sugar, water, and mint leaves. Bring to a boil, then simmer for 10 minutes. Strain and set aside to cool.
- Once the mint simple syrup is cool, in a blender, combine rum, coconut milk, lime juice, mint simple syrup, and ice.
- Blend until smooth and creamy.
- Pour the frozen mojito into a cocktail glass.
- Garnish with mint leaves and toasted coconut flakes, if desired.
- Serve immediately.
