Ingredients

  • 2 tbsp sugar or baking stevia
  • 1/4 cup water
  • 1/4 cup mint leaves
  • 1.50 oz white rum
  • 1/2 cup canned light coconut milk
  • Juice of 1 lime
  • 1/2 cup ice
  • Garnish: handful of mint leaves, toasted coconut flakes (optional)

Instructions

  1. In a small saucepan, combine sugar, water, and mint leaves. Bring to a boil, then simmer for 10 minutes. Strain and set aside to cool.
  2. Once the mint simple syrup is cool, in a blender, combine rum, coconut milk, lime juice, mint simple syrup, and ice.
  3. Blend until smooth and creamy.
  4. Pour the frozen mojito into a cocktail glass.
  5. Garnish with mint leaves and toasted coconut flakes, if desired.
  6. Serve immediately.
