Ingredients

  • 1/8 cup sugar or baking stevia
  • 1/4 cup water
  • 1/8 cup mint leaves
  • 1.50 oz white rum
  • 1/2 cup canned light coconut milk
  • Juice of 1/2 lime
  • 1/2 cup ice
  • Garnish: a few mint leaves
  • Garnish: toasted coconut flakes, if desired

Instructions

  1. In a small saucepan, combine sugar or baking stevia, water, and mint leaves. Bring to a boil, then simmer for 10 minutes. Strain and set aside the mint simple syrup to cool.
  2. In a high-powered blender, combine the rum, coconut milk, lime juice, reserved mint simple syrup, and ice.
  3. Blend until smooth and creamy, adding more ice if needed to reach the desired consistency.
