Ingredients

  • 2 tablespoons powdered monkfruit sweetener
  • 1/4 cup water
  • 1 cup frozen pineapple chunks
  • 4 oz pineapple juice
  • 3 tablespoons coconut cream
  • 2 oz light rum
  • 6-8 ice cubes
  • Garnish: Fresh pineapple slice

Instructions

  1. In a small skillet, combine the powdered monkfruit sweetener and water, heat until sweetener dissolves, then set aside to cool.
  2. Place the frozen pineapple, pineapple juice, coconut cream, rum, and one-quarter cup of the simple syrup into a blender and blend until smooth.
  3. Gradually add the ice to the blender while it's running until the desired consistency is achieved.
  4. Taste the mixture and add additional simple syrup if desired, then blend for another 30 seconds.
  5. Pour the cocktail into a glass and garnish with a fresh pineapple slice. Enjoy immediately!
