Ingredients
- 2 tablespoons powdered monkfruit sweetener
- 1/4 cup water
- 1 cup frozen pineapple chunks
- 4 oz pineapple juice
- 3 tablespoons coconut cream
- 2 oz light rum
- 6-8 ice cubes
- Garnish: Fresh pineapple slice
Instructions
- In a small skillet, combine the powdered monkfruit sweetener and water, heat until sweetener dissolves, then set aside to cool.
- Place the frozen pineapple, pineapple juice, coconut cream, rum, and one-quarter cup of the simple syrup into a blender and blend until smooth.
- Gradually add the ice to the blender while it's running until the desired consistency is achieved.
- Taste the mixture and add additional simple syrup if desired, then blend for another 30 seconds.
