Ingredients

  • 3/4 cup chopped pineapple chunks
  • 1/4 cup ice cubes
  • 1/4 cup fresh pineapple juice (or canned juice)
  • 1/2 can coconut cream
  • 1 tablespoon coconut sugar or sweetener of choice
  • Fresh pineapple wedges for garnish (optional)

Instructions

  1. Chop the pineapple into 1-inch pieces and set aside.
  2. Add the pineapple and ice into a blender, then blend on high for 30 seconds.
  3. Pour in half of the can of coconut cream, 1/4 cup of fresh pineapple juice, and 1 tablespoon of coconut sugar into the blender.
  4. Blend on high for 30-60 seconds, or until the mixture is smooth with some ice chunks.
  5. Pour the tropical bliss mocktail into an 8-ounce glass.
  6. Garnish with fresh pineapple slices and enjoy.
