Ingredients
- 3/4 cup chopped pineapple chunks
- 1/4 cup ice cubes
- 1/4 cup fresh pineapple juice (or canned juice)
- 1/2 can coconut cream
- 1 tablespoon coconut sugar or sweetener of choice
- Fresh pineapple wedges for garnish (optional)
Instructions
- Chop the pineapple into 1-inch pieces and set aside.
- Add the pineapple and ice into a blender, then blend on high for 30 seconds.
- Pour in half of the can of coconut cream, 1/4 cup of fresh pineapple juice, and 1 tablespoon of coconut sugar into the blender.
- Blend on high for 30-60 seconds, or until the mixture is smooth with some ice chunks.
- Pour the tropical bliss mocktail into an 8-ounce glass.
