Tiramisu Martini Delight
A delightful twist on classic tiramisu, Tiramisu Martini Delight offers dainty servings of espresso-soaked sponge fingers topped with Marsala-infused mascarpone cream.
Ingredients
- 3.50 oz. espresso coffee (or strong instant coffee)
- 2 tbsp coffee liqueur
- 4 Savoiardi biscuits (fine sponge fingers)
- 2 large egg whites
- 8.80 oz. mascarpone cheese
- 2 tbsp honey
- 2 tbsp Marsala
- Approx. 1 tsp good-quality cocoa powder
Instructions
- Prepare espresso and pour it into a heatproof jug, adding the coffee liqueur. Allow it to cool for about 10 minutes.
- Break the Savoiardi sponge fingers into small pieces and place them in 4 small martini glasses.
- Pour the cooled espresso mixture over the sponge fingers and gently press down to ensure they are soaked.
- Using an electric hand-held whisk, beat the egg whites until they form soft peaks, then set aside.
- In a separate bowl, combine the mascarpone and honey, then beat until smooth. Slowly beat in the Marsala.
- Fold the egg whites into the mascarpone mixture in thirds, then spoon this mixture over the soaked sponge fingers in each glass, creating a swirly peak at the top.
- Let the glasses stand in the fridge for at least 20 minutes and up to 24 hours, then dust with cocoa just before serving.
