Ingredients

  • 3.50 oz. espresso coffee (or strong instant coffee)
  • 2 tbsp coffee liqueur
  • 4 Savoiardi biscuits (fine sponge fingers)
  • 2 large egg whites
  • 8.80 oz. mascarpone cheese
  • 2 tbsp honey
  • 2 tbsp Marsala
  • Approx. 1 tsp good-quality cocoa powder

Instructions

  1. Prepare espresso and pour it into a heatproof jug, adding the coffee liqueur. Allow it to cool for about 10 minutes.
  2. Break the Savoiardi sponge fingers into small pieces and place them in 4 small martini glasses.
  3. Pour the cooled espresso mixture over the sponge fingers and gently press down to ensure they are soaked.
  4. Using an electric hand-held whisk, beat the egg whites until they form soft peaks, then set aside.
  5. In a separate bowl, combine the mascarpone and honey, then beat until smooth. Slowly beat in the Marsala.
  6. Fold the egg whites into the mascarpone mixture in thirds, then spoon this mixture over the soaked sponge fingers in each glass, creating a swirly peak at the top.
  7. Let the glasses stand in the fridge for at least 20 minutes and up to 24 hours, then dust with cocoa just before serving.
