Ingredients

  • 1 cup water
  • 1 cup demerara sugar (or Turbinado or light brown sugar)
  • 0.25 tsp ground cinnamon
  • 0.25 tsp ground cloves
  • 0.25 tsp ground allspice
  • 1 tsp grated dark chocolate (optional)
  • Ice (1 large cube and small regular cubes)
  • 2.50 oz Teeling Small Batch Irish whiskey
  • 0.50 oz spice syrup
  • 2 dashes Angostura bitters
  • Cinnamon stick (for garnish)

Instructions

  1. In a small saucepan, combine water, sugar, cinnamon, cloves, allspice, and chocolate (if using). Heat and stir until boiling, then cook for 30 seconds, and let it cool.
  2. Place a large ice cube in a rocks glass.
  3. In a mixing glass, add ice cubes, whiskey, spice syrup, and bitters. Stir briefly to combine.
  4. Strain the mixture into the rocks glass and garnish with a cinnamon stick.
