Ingredients

  • 2 oz semi-sweet chocolate
  • 1 tbsp cocoa powder
  • 1 tsp cornstarch
  • 2 tsp sugar
  • Pinch of salt
  • 3-4 oz espresso
  • 2 oz brandy (or dark rum)
  • 1 cup whole milk
  • 1 tsp vanilla extract
  • For the topping:
  • 4 tbsp mascarpone
  • 1/2 cup heavy cream
  • 2 tbsp powdered sugar
  • 1/2 tsp vanilla extract
  • Pinch of salt
  • Cocoa powder for dusting
  • 2 ladyfingers

Instructions

  1. In a small saucepan, combine the semi-sweet chocolate, cocoa powder, cornstarch, sugar, and a pinch of salt. Heat and stir until the chocolate is melted and the mixture is well combined.
  2. Add the espresso, brandy, and milk, stirring until steaming but not bubbling. Stir in the vanilla extract and pour into a glass.
  3. In a separate bowl, beat the mascarpone and heavy cream until soft peaks form. Add powdered sugar, vanilla, and salt, and continue to beat until medium peaks form.
  4. Fill a piping bag with the whipped cream and pipe it onto the hot chocolate. Insert a ladyfinger and dust with cocoa powder. Serve immediately.
