Ingredients
- 2 oz semi-sweet chocolate
- 1 tbsp cocoa powder
- 1 tsp cornstarch
- 2 tsp sugar
- Pinch of salt
- 3-4 oz espresso
- 2 oz brandy (or dark rum)
- 1 cup whole milk
- 1 tsp vanilla extract
- For the topping:
- 4 tbsp mascarpone
- 1/2 cup heavy cream
- 2 tbsp powdered sugar
- 1/2 tsp vanilla extract
- Pinch of salt
- Cocoa powder for dusting
- 2 ladyfingers
Instructions
- In a small saucepan, combine the semi-sweet chocolate, cocoa powder, cornstarch, sugar, and a pinch of salt. Heat and stir until the chocolate is melted and the mixture is well combined.
- Add the espresso, brandy, and milk, stirring until steaming but not bubbling. Stir in the vanilla extract and pour into a glass.
- In a separate bowl, beat the mascarpone and heavy cream until soft peaks form. Add powdered sugar, vanilla, and salt, and continue to beat until medium peaks form.
- Fill a piping bag with the whipped cream and pipe it onto the hot chocolate. Insert a ladyfinger and dust with cocoa powder. Serve immediately.
