Ingredients
- 2 oz Blended Scotch whisky
- 1.50 oz Freshly squeezed pink grapefruit juice
- 0.50 oz Freshly squeezed lemon juice
- 0.50 oz Rich sugar syrup (2:1 sugar to water, 65.0degBrix)
- 0.67 oz Pasteurized egg white (or aquafaba)
- 3 dashes Peychaud's or Creole bitters
- 2.50 oz Pink grapefruit soda
Instructions
- In a shaker, combine the whisky, pink grapefruit juice, lemon juice, sugar syrup, egg white, and bitters with ice.
- Shake the ingredients well and strain the mixture back into the shaker.
- Dry shake (without ice) and slowly pour 2/3 of the contents of the shaker from a higher than normal height into a chilled empty glass (no ice in the glass).
- Simultaneously pour the pink grapefruit soda into the glass while pouring the shaken mixture.
- Leave the cocktail to settle for at least a minute to achieve a perfect head before topping off the glass with the remaining contents from the shaker.
- For the best results, place the glass in a glass froster, fridge, or freezer during the settling period.
