Summer Berry Fizz

Ingredients
- 1 1/2 tbsp granulated sugar
- 1 1/2 tbsp water
- 7-8 fresh mint leaves
- 5 oz non-alcoholic cider or prosecco
- 1/2 oz orange juice (or 1/3 oz triple sec)
- 1-1.50 oz mint simple syrup
- 1 lemon, thinly sliced
- 1/4 cup sliced strawberries or mixed fresh or frozen berries
- Optional: extra mint for garnish
Instructions
- In a small saucepan over medium heat, combine the water, sugar, and fresh mint. Stir until the sugar dissolves, then remove from the heat.
- Let the mixture rest for 10 minutes, remove the mint, and transfer to a large mason jar or another container. Chill in the refrigerator.
- In a pitcher, mix the berries, orange juice, lemon, and 1 cup of the simple syrup. If using frozen berries, no need to thaw.
- If serving immediately, pour the cider or prosecco over the fruit and serve chilled. If serving later, prepare the fruit mixture 8-12 hours in advance and add the sparkling beverage just before serving.
- Adjust sweetness with more simple syrup if desired.
- Serve the Summer Berry Fizz immediately over ice. Garnish with extra mint leaves or more fruit in the glasses if desired.
