Ingredients

  • 3-5 saffron strands, plus extra for garnish
  • 2 tablespoons sugar
  • 1 green cardamom pod, lightly crushed
  • 1 tablespoon ground sumac
  • 3/4 cup chilled club soda or water
  • Ice

Instructions

  1. Grind the saffron strands with 2 tablespoons of sugar to a fine powder using a mortar and pestle.
  2. In a medium saucepan over medium-high heat, combine 1 cup of water, sugar, crushed cardamom, and powdered saffron mixture, and bring to a simmer, stirring until the sugar dissolves.
  3. Remove from the heat and stir in the ground sumac. Cover the saucepan and let it steep for 30 minutes.
  4. Strain the liquid through a fine mesh strainer over a medium bowl and chill before serving.
  5. Fill a tall glass with ice.
  6. In a large pitcher, stir the syrup with chilled club soda or water.
  7. Pour 1 cup of the drink into the glass.
  8. Garnish with a few saffron strands.
  9. Store any leftovers in the refrigerator for up to 1 week.
