A spicy variation of the classic Bloody Mary, the Kimchi Mary gets its unique heat and flavor from pureed kimchi and Sriracha chile sauce.

Ingredients

  • 1/2 cup kimchi
  • 6 oz tomato juice
  • 1 tbsp Sriracha chile sauce
  • 1/2 tbsp Worcestershire sauce
  • 1/2 tbsp sherry vinegar
  • Salt
  • Freshly ground pepper
  • 2 oz vodka
  • Ice
  • Mint sprigs or shiso leaves, for garnish

Instructions

  1. Puree the kimchi with the tomato juice, Sriracha, Worcestershire, and vinegar.
  2. Strain the kimchi puree through a fine-mesh strainer into a bowl, pressing gently to extract the juice.
  3. Discard or reserve the leftover solids.
  4. Chill the kimchi-Mary mix thoroughly.
  5. Season the mix with salt and pepper, then stir in the vodka.
  6. Serve the cocktail over ice, and garnish with mint sprigs or shiso leaves.
