Ingredients

  • 2 ripe Fuyu persimmons
  • 1/2 cup maple syrup
  • 1/2 cup water
  • 1 cinnamon stick
  • 1/4 tsp fresh grated ginger (or a pinch of ground ginger)
  • 2 oz bourbon
  • Juice from half a lemon
  • Juice from half an orange
  • Dash of orange bitters
  • 2 tbsp Spiced Persimmon Puree
  • Sparkling water

Instructions

  1. In a small pot over medium heat, combine the persimmons, maple syrup, water, ginger, and cinnamon stick. Bring to a boil and cook for 6-8 minutes until the persimmons have softened, then remove from heat.
  2. Remove the cinnamon stick and puree the ingredients. Allow the puree to cool before using in the cocktail.
  3. In a cocktail shaker, combine the bourbon, lemon juice, orange juice, orange bitters, and Spiced Persimmon Puree.
  4. Shake to combine and strain into a glass.
  5. Top with sparkling water and garnish with a cinnamon stick. Enjoy!
