Southern Mint Fizz

Ingredients
- 1 tbsp sugar
- 1 tbsp water
- 2 tbsp lemon juice
- 8-10 fresh mint leaves
- 1 oz bourbon (optional)
- 1 cup ginger ale
- Ice cubes
- Optional: Lemon slice and extra fresh mint leaves for garnish
Instructions
- In a small saucepan, bring sugar and water to a boil. Allow to cook for 1-2 minutes until the sugar is dissolved. Remove from heat.
- Add lemon juice and fresh mint leaves to the saucepan. If using bourbon, stir it in. Let the mixture cool and refrigerate for 1 hour until chilled.
- Strain the mixture into a 2-quart pitcher just before serving.
- Stir in the ginger ale and serve the cocktail over ice.
- Optionally, garnish with lemon slices and extra mint leaves.
