Ingredients

  • 1 tbsp sugar
  • 1 tbsp water
  • 2 tbsp lemon juice
  • 8-10 fresh mint leaves
  • 1 oz bourbon (optional)
  • 1 cup ginger ale
  • Ice cubes
  • Optional: Lemon slice and extra fresh mint leaves for garnish

Instructions

  1. In a small saucepan, bring sugar and water to a boil. Allow to cook for 1-2 minutes until the sugar is dissolved. Remove from heat.
  2. Add lemon juice and fresh mint leaves to the saucepan. If using bourbon, stir it in. Let the mixture cool and refrigerate for 1 hour until chilled.
  3. Strain the mixture into a 2-quart pitcher just before serving.
  4. Stir in the ginger ale and serve the cocktail over ice.
  5. Optionally, garnish with lemon slices and extra mint leaves.
