Ingredients
- 1 cup whole milk
- 1/2 cup heavy cream
- 3 egg yolks
- 1 tbsp plus 1 tsp sugar
- 1 oz bourbon
- 1/2 tsp vanilla extract
- Freshly grated nutmeg, for garnish
- 2 egg whites
- Whipped cream, for serving
Instructions
- Preheat Traeger to 180°F and smoke whole milk and heavy cream for 60 minutes in a baking dish.
- In a stand mixer, beat egg yolks and gradually add 1 tbsp sugar until dissolved.
- Combine smoked milk and cream, bourbon, vanilla, and nutmeg into the egg mixture and stir.
- Beat egg whites until soft peaks form, gradually adding 1 tsp sugar until stiff peaks form.
- Gently fold the egg whites into the cream mixture, then chill for a couple of hours.
- Garnish with nutmeg and whipped cream before serving.
