Ingredients

  • 1 cup whole milk
  • 1/2 cup heavy cream
  • 3 egg yolks
  • 1 tbsp plus 1 tsp sugar
  • 1 oz bourbon
  • 1/2 tsp vanilla extract
  • Freshly grated nutmeg, for garnish
  • 2 egg whites
  • Whipped cream, for serving

Instructions

  1. Preheat Traeger to 180°F and smoke whole milk and heavy cream for 60 minutes in a baking dish.
  2. In a stand mixer, beat egg yolks and gradually add 1 tbsp sugar until dissolved.
  3. Combine smoked milk and cream, bourbon, vanilla, and nutmeg into the egg mixture and stir.
  4. Beat egg whites until soft peaks form, gradually adding 1 tsp sugar until stiff peaks form.
  5. Gently fold the egg whites into the cream mixture, then chill for a couple of hours.
  6. Garnish with nutmeg and whipped cream before serving.
