Ingredients

  • 1.50 oz gin
  • 0.75 oz freshly squeezed lemon juice
  • 1 oz sage simple syrup
  • 1 egg white (pasteurized)
  • 0.50 cup sugar
  • 6-7 fresh sage leaves
  • 0.50 cup water

Instructions

  1. In a saucepan, combine water and sugar, bring to a boil, then add fresh sage leaves and stir until the sugar dissolves. Let the syrup simmer gently on low heat until the sugar has fully dissolved, then turn off the heat and let it cool with the sage leaves in the syrup.
  2. In a cocktail shaker, combine gin, freshly squeezed lemon juice, cooled sage syrup, and egg white. Shake vigorously until a good foam forms, then add a couple of ice cubes and shake until the shaker feels cool to the touch.
