Rhubarb Rosemary Gin Delight
A visually stunning cocktail that balances the tartness of rhubarb with the floral sweetness of elderflower, garnished with a sprig of rosemary for a sophisticated touch.
Ingredients
- 1 3/4 cups chopped rhubarb
- 1 1/4 cups sugar
- 1 sprig rosemary
- Red food coloring (optional)
- 2 1/2 fl oz rhubarb syrup
- 2/3 fl oz elderflower cordial
- 2 fl oz water
- 1 1/3 fl oz gin
- Ice
Instructions
- In a pot, simmer the chopped rhubarb with water for an hour, then strain the liquid and combine 2 cups of it with sugar in a pot. Simmer until thickened.
- Allow the syrup to cool and add food coloring if desired.
- Fill a glass with ice and pour in the rhubarb syrup.
- In a separate glass, mix elderflower cordial, water, and gin.
- To create an ombre effect, pour the gin/cordial mix over the back of a spoon into the cocktail glass.
- Garnish with a sprig of rosemary and serve.
