Ingredients

  • 1 3/4 cups chopped rhubarb
  • 1 1/4 cups sugar
  • 1 sprig rosemary
  • Red food coloring (optional)
  • 2 1/2 fl oz rhubarb syrup
  • 2/3 fl oz elderflower cordial
  • 2 fl oz water
  • 1 1/3 fl oz gin
  • Ice

Instructions

  1. In a pot, simmer the chopped rhubarb with water for an hour, then strain the liquid and combine 2 cups of it with sugar in a pot. Simmer until thickened.
  2. Allow the syrup to cool and add food coloring if desired.
  3. Fill a glass with ice and pour in the rhubarb syrup.
  4. In a separate glass, mix elderflower cordial, water, and gin.
  5. To create an ombre effect, pour the gin/cordial mix over the back of a spoon into the cocktail glass.
  6. Garnish with a sprig of rosemary and serve.
