Ingredients

  • 1 egg yolk
  • 3/8 cup heavy cream
  • 5/16 cup milk
  • 1 tablespoon + 1 teaspoon sugar
  • 3 tablespoons canned pumpkin
  • 1/2 teaspoon vanilla
  • 1/2 teaspoon pumpkin pie spice
  • Freshly grated nutmeg

Instructions

  1. In a saucepan, combine egg yolk, 1/4 cup cream, 1/4 cup milk, and sugar. Cook and stir over medium heat for about 5 minutes, until the mixture coats the back of a spoon; do not let it boil.
  2. Strain the mixture into a pitcher using a fine mesh sieve. Stir in the remaining cream, milk, pumpkin, vanilla, and pumpkin pie spice.
  3. Place the pitcher in a bowl of ice water and stir for 2 minutes. Cover and chill in the refrigerator for 4 to 24 hours.
  4. Top each serving with freshly grated nutmeg before serving.
