Ingredients

  • 1.50 oz Pisco Acholado
  • 1 egg white
  • 3 drops of Angustura or chuncho bitters
  • 1 oz lime juice
  • 0.75 oz sugar syrup

Instructions

  1. In a blender, combine Pisco Acholado, egg white, lime juice, and sugar syrup with 3 ice cubes.
  2. Blend until smooth.
  3. Carefully hold back the froth with the blender lid when pouring into a chilled glass.
  4. Add 3 drops of bitters over the foam.
  5. Alternatively, in a shaker filled with ice, combine Pisco Acholado, egg white, lime juice, and sugar syrup.
  6. Shake vigorously for at least 30 seconds.
  7. Strain the mixture into a chilled glass, holding back the froth with the shaker lid.
  8. Add 3 drops of bitters over the foam.
