Ingredients
- 1 tablespoon sugar
- 1 1/2 cups water
- 1 family-sized iced tea bag
- 1/4 cup loosely-packed fresh mint leaves
- 3 fresh ripe peaches
- 1 tablespoon freshly-squeezed lemon juice
- 1/4 cup ginger ale (chilled)
- 1/2 cup club soda (chilled)
Instructions
- In a small saucepan, combine the sugar and 1 cup of water. Bring to a boil, then simmer until the sugar dissolves. Set aside to cool.
- In a large pot, bring the remaining 1/2 cup water to a boil. Remove from heat and add the tea bag and mint leaves. Allow to steep for 10 minutes. Cool to room temperature, then strain the tea into a jug, discarding the mint leaves.
- In a large pot, bring enough water to cover the peaches to a boil. Add the peaches and cook for about 30 seconds. Transfer the peaches to an ice bath, then peel and slice them.
- Blend the peaches with lemon juice and strain the puree into the jug of cooled tea. Add 1 tablespoon of the simple syrup and stir well. Refrigerate for at least 4 hours.
- Just before serving, gently stir in the ginger ale and club soda. Adjust sweetness to taste by adding more simple syrup or club soda.
