Ingredients

  • 1 tablespoon sugar
  • 1 1/2 cups water
  • 1 family-sized iced tea bag
  • 1/4 cup loosely-packed fresh mint leaves
  • 3 fresh ripe peaches
  • 1 tablespoon freshly-squeezed lemon juice
  • 1/4 cup ginger ale (chilled)
  • 1/2 cup club soda (chilled)

Instructions

  1. In a small saucepan, combine the sugar and 1 cup of water. Bring to a boil, then simmer until the sugar dissolves. Set aside to cool.
  2. In a large pot, bring the remaining 1/2 cup water to a boil. Remove from heat and add the tea bag and mint leaves. Allow to steep for 10 minutes. Cool to room temperature, then strain the tea into a jug, discarding the mint leaves.
  3. In a large pot, bring enough water to cover the peaches to a boil. Add the peaches and cook for about 30 seconds. Transfer the peaches to an ice bath, then peel and slice them.
  4. Blend the peaches with lemon juice and strain the puree into the jug of cooled tea. Add 1 tablespoon of the simple syrup and stir well. Refrigerate for at least 4 hours.
  5. Just before serving, gently stir in the ginger ale and club soda. Adjust sweetness to taste by adding more simple syrup or club soda.
