Ingredients
- 1/8 cup water
- 1/8 cup sugar
- 1/4 cup pounded and roughly chopped lemongrass
- 1/2 tablespoon roughly chopped fresh rosemary
- 1/4 Thai, serrano, or jalapeño pepper (sliced; seeds removed for a milder drink)
- 3/4 tablespoon fresh lemon juice
- 1/8 cup vodka
- 1/4 cup ginger beer
- Lemon wedge and rosemary sprig (to garnish)
Instructions
- In a small saucepan, heat the water and sugar over medium-high heat until the liquid comes to a simmer and the sugar dissolves.
- Add the lemongrass, rosemary, and chile pepper, then turn off the heat. Let the mixture sit for 2 hours at room temperature.
- Strain out the solids and chill the syrup in the fridge for at least an hour.
- In a serving glass, combine 2 tablespoons of the simple syrup, the lemon juice, and vodka.
- Pour in the ginger beer and stir.
- Taste and add more simple syrup if desired.
- Fill the glass with ice and garnish with a rosemary sprig and a lemon wedge.
