Ingredients

  • 1/8 cup water
  • 1/8 cup sugar
  • 1/4 cup pounded and roughly chopped lemongrass
  • 1/2 tablespoon roughly chopped fresh rosemary
  • 1/4 Thai, serrano, or jalapeño pepper (sliced; seeds removed for a milder drink)
  • 3/4 tablespoon fresh lemon juice
  • 1/8 cup vodka
  • 1/4 cup ginger beer
  • Lemon wedge and rosemary sprig (to garnish)

Instructions

  1. In a small saucepan, heat the water and sugar over medium-high heat until the liquid comes to a simmer and the sugar dissolves.
  2. Add the lemongrass, rosemary, and chile pepper, then turn off the heat. Let the mixture sit for 2 hours at room temperature.
  3. Strain out the solids and chill the syrup in the fridge for at least an hour.
  4. In a serving glass, combine 2 tablespoons of the simple syrup, the lemon juice, and vodka.
  5. Pour in the ginger beer and stir.
  6. Taste and add more simple syrup if desired.
  7. Fill the glass with ice and garnish with a rosemary sprig and a lemon wedge.
