Ingredients

  • 3 tablespoons honey
  • 1 1/2 tablespoons water
  • 1 tablespoon fresh rosemary leaves, plus more for garnish
  • 2 tablespoons Rosemary-Infused Simple Syrup
  • 1/4 cup (2 ounces) good quality bourbon
  • 1 1/2 tablespoons (0.75 ounces) ginger liqueur
  • 1 1/2 tablespoons fresh lemon juice
  • 3 dashes lemon bitters (can also use orange)
  • Rosemary sprig, for garnish
  • Lemon slice, for garnish

Instructions

  1. In a small saucepan, heat the honey, water, and rosemary leaves over medium-low heat, stirring, until the honey is dissolved. Remove from heat, cover, and let steep at room temperature for several hours or overnight.
  2. Place 2 tablespoons of rosemary-infused simple syrup (with the rosemary) in a cocktail shaker that's around half full with ice. Store the remaining simple syrup in a sealed container and refrigerate for later use.
  3. Add bourbon, ginger liqueur, lemon juice, and lemon bitters to the cocktail shaker. Shake until well mixed and chilled.
  4. Strain into a cocktail glass over ice. Garnish with a small rosemary sprig and a slice of lemon.
