Ingredients
- 3 tablespoons honey
- 1 1/2 tablespoons water
- 1 tablespoon fresh rosemary leaves, plus more for garnish
- 2 tablespoons Rosemary-Infused Simple Syrup
- 1/4 cup (2 ounces) good quality bourbon
- 1 1/2 tablespoons (0.75 ounces) ginger liqueur
- 1 1/2 tablespoons fresh lemon juice
- 3 dashes lemon bitters (can also use orange)
- Rosemary sprig, for garnish
- Lemon slice, for garnish
Instructions
- In a small saucepan, heat the honey, water, and rosemary leaves over medium-low heat, stirring, until the honey is dissolved. Remove from heat, cover, and let steep at room temperature for several hours or overnight.
- Place 2 tablespoons of rosemary-infused simple syrup (with the rosemary) in a cocktail shaker that's around half full with ice. Store the remaining simple syrup in a sealed container and refrigerate for later use.
- Add bourbon, ginger liqueur, lemon juice, and lemon bitters to the cocktail shaker. Shake until well mixed and chilled.
- Strain into a cocktail glass over ice. Garnish with a small rosemary sprig and a slice of lemon.
