Ingredients

  • 1/2 cup water
  • 3 tablespoons sugar
  • 1/2 tablespoon dried culinary lavender
  • 1/2 teaspoon butterfly pea pollen powder
  • 2 oz cold water
  • Ice
  • 2 oz gin
  • 1 oz lavender syrup
  • 3 oz lemonade
  • Sparkling water, for topping off the glass
  • Butterfly pea pollen mixture, optional
  • Lemon slice, for optional garnish
  • Lavender sprig, for optional garnish

Instructions

  1. In a small saucepan, combine water and sugar. Bring to a boil, then simmer for 5 minutes until the sugar is dissolved.
  2. Stir in the dried lavender and remove from heat. Let the syrup cool to room temperature to allow the lavender to steep.
  3. Strain out the lavender and store the cooled syrup in the fridge.
  4. Fill a glass with ice.
  5. In a shaker filled with ice, combine gin, lavender syrup, and lemonade. Shake vigorously to combine and chill the ingredients. Strain into the glass filled with ice.
  6. Top with a splash of sparkling water.
  7. Optional: Slowly pour a few teaspoons of butterfly pea pollen mixture over the top of the glass for a dramatic effect.
  8. Garnish with a lemon slice and a lavender sprig. Serve immediately.
