Ingredients
- 1/2 cup water
- 3 tablespoons sugar
- 1/2 tablespoon dried culinary lavender
- 1/2 teaspoon butterfly pea pollen powder
- 2 oz cold water
- Ice
- 2 oz gin
- 1 oz lavender syrup
- 3 oz lemonade
- Sparkling water, for topping off the glass
- Butterfly pea pollen mixture, optional
- Lemon slice, for optional garnish
- Lavender sprig, for optional garnish
Instructions
- In a small saucepan, combine water and sugar. Bring to a boil, then simmer for 5 minutes until the sugar is dissolved.
- Stir in the dried lavender and remove from heat. Let the syrup cool to room temperature to allow the lavender to steep.
- Strain out the lavender and store the cooled syrup in the fridge.
- Fill a glass with ice.
- In a shaker filled with ice, combine gin, lavender syrup, and lemonade. Shake vigorously to combine and chill the ingredients. Strain into the glass filled with ice.
- Top with a splash of sparkling water.
- Optional: Slowly pour a few teaspoons of butterfly pea pollen mixture over the top of the glass for a dramatic effect.
- Garnish with a lemon slice and a lavender sprig. Serve immediately.
