Ingredients

  • 1/2 oz hibiscus simple syrup
  • 1/2 oz. tequila blanco
  • 3 oz. fresh lime juice
  • 3 mint leaves plus sprig for serving
  • 2 oz. dry sparkling rosé
  • Raspberry sorbet (optional, for serving)

Instructions

  1. In a cocktail shaker, combine tequila, lime juice, 1/2 oz. hibiscus syrup, and 3 mint leaves.
  2. Fill the shaker with ice, then cover and shake until the outside is frosty for about 20 seconds.
  3. Strain the mixture into a Champagne flute.
  4. Gradually add the rosé, stopping 1/2" from the top of the glass.
  5. Optionally, top the cocktail with a small scoop of raspberry sorbet and garnish with a mint sprig.
