Ingredients
- 1/2 oz hibiscus simple syrup
- 1/2 oz. tequila blanco
- 3 oz. fresh lime juice
- 3 mint leaves plus sprig for serving
- 2 oz. dry sparkling rosé
- Raspberry sorbet (optional, for serving)
Instructions
- In a cocktail shaker, combine tequila, lime juice, 1/2 oz. hibiscus syrup, and 3 mint leaves.
- Fill the shaker with ice, then cover and shake until the outside is frosty for about 20 seconds.
- Strain the mixture into a Champagne flute.
- Gradually add the rosé, stopping 1/2" from the top of the glass.
- Optionally, top the cocktail with a small scoop of raspberry sorbet and garnish with a mint sprig.
