Ingredients

  • 1 large egg yolk
  • a pinch of kosher salt
  • 2 tablespoons granulated sugar
  • 1/2 cup whole milk
  • 1/2 cup heavy cream
  • 1/4 teaspoon pure vanilla extract
  • 1/4 teaspoon pure peppermint extract
  • 2 tablespoons gold rum or bourbon (optional)
  • Finely crushed peppermints
  • Peppermint stick, for garnish

Instructions

  1. In a bowl, whisk together the egg yolk, salt, and 1 tablespoon of sugar.
  2. In a medium saucepan, heat the milk and remaining 1 tablespoon of sugar until it simmers.
  3. Slowly whisk the hot milk mixture into the egg yolk mixture.
  4. Return the mixture to the pot and cook over medium-low heat, stirring constantly, until it reaches 175°F on an instant-read thermometer. The mixture should be foamy and slightly thickened but will not fully coat the back of a spoon; this should take 3 to 5 minutes.
  5. Strain the mixture through a fine-mesh strainer into a medium bowl.
  6. Cool the mixture to room temperature, then cover and chill until cold, at least 3 hours or up to overnight.
  7. When ready to serve, whisk the cream with an electric mixer until soft peaks form, about 1 minute.
  8. Whisk in the vanilla extract, peppermint extract, and 1/4 of the whipped cream into the egg yolk mixture.
  9. Fold in the remaining whipped cream in 2 additions.
  10. Stir in the rum or bourbon, if desired.
  11. Place the crushed peppermints on a shallow plate.
  12. Lightly moisten the rims of mugs or glasses, then dip in the crushed peppermint.
  13. Pour the eggnog into glasses and serve with a peppermint stick.
