Ingredients

  • 1 egg, separated
  • 2 tbsp sugar
  • 1/2 cup milk
  • 3/4 cup thickened cream
  • 2 tbsp Bourbon
  • 1 1/2 tbsp dark rum
  • 1 tbsp brandy
  • Pinch of mixed spice
  • To serve: finely grated nutmeg

Instructions

  1. In a bowl, whisk the egg yolks with sugar until pale and thick (4-6 minutes).
  2. Add the milk and 1/2 cup cream to the egg mixture and whisk to combine.
  3. Pour in the Bourbon, rum, brandy, and mixed spice. Whisk until well combined.
  4. Refrigerate the mixture for at least 5 hours or overnight.
  5. In an electric mixer, whisk the egg whites until stiff peaks form (2-3 minutes).
  6. Gently fold the milk mixture into the egg whites.
  7. In the same mixer, whisk the remaining cream until soft peaks form. Fold it into the egg and milk mixture.
  8. Serve the cocktail sprinkled with nutmeg.
