Fizzing Grapefruit Whisky Delight

Ingredients
- 2 oz. blended Scotch whisky
- 1.50 oz. freshly squeezed pink grapefruit juice
- 0.50 oz. freshly squeezed lemon juice
- 0.50 oz. rich sugar syrup (2:1 sugar to water, 65.0degBrix)
- 0.70 oz. pasteurized egg white (or aquafaba)
- 3 dashes Peychaud's or Creole bitters
- 2.50 oz. pink grapefruit soda
Instructions
- Combine whisky, grapefruit juice, lemon juice, sugar syrup, egg white or aquafaba, and bitters in a shaker with ice.
- Shake well and strain the mixture back into the shaker.
- Dry shake (without ice) and slowly pour 2/3 of the mixture from a higher than normal height into a chilled empty glass.
- Simultaneously pour the grapefruit soda into the glass to form a single stream of liquid with the cocktail.
- Allow the cocktail to settle for at least a minute to achieve a perfect head.
- Top off the cocktail with the remaining mixture from the shaker, allowing the head to rise like a souffle.
