Ingredients

  • 1 large egg yolk
  • 2 tablespoons granulated sugar
  • 1 cup whole milk
  • 1 cinnamon stick
  • 2 whole cloves
  • 1/3 cup half & half
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon rum extract
  • a pinch of ground nutmeg

Instructions

  1. In a large mixing bowl with a pouring spout, whisk together the egg yolk and sugar until light in color.
  2. In a medium saucepan over medium heat, heat the milk with the cinnamon stick and whole cloves until barely boiling.
  3. Slowly whisk 1/4 cup of the hot milk mixture into the egg mixture to temper the egg.
  4. Continue whisking in 1/4 cupfuls of the hot milk into the egg mixture until about half of the milk has been added.
  5. Whisk the tempered egg mixture back into the saucepan and cook over medium heat for 3 minutes, whisking constantly.
  6. Strain the mixture from the saucepan into a glass jug and discard the cinnamon stick and whole cloves.
  7. Allow to cool for about an hour, then stir in the half & half, vanilla extract, rum extract, and nutmeg.
  8. Chill in the refrigerator and serve in a glass with a sprinkle of nutmeg on top.
