Festive Bourbon Eggnog

Ingredients

  • 3 cups full-fat milk
  • 2 large eggs
  • 2.50 tablespoons golden caster sugar
  • 2 fl oz Bourbon, rum or brandy
  • 2 fl oz whipped cream (optional)
  • Freshly grated nutmeg, to serve

Instructions

  1. Heat the milk in a non-stick saucepan until just below boiling point.
  2. In a large bowl, beat the eggs and sugar together until thoroughly combined.
  3. Pour half of the warm milk into the egg mixture and stir well, then return all the mixture to the pan with the rest of the warm milk.
  4. Cook on low heat until the mixture starts to thicken, but do not let it boil.
  5. Add the Bourbon, rum or brandy and stir well.
  6. Pour into heat-proof glasses and top with whipped cream if desired.
  7. Grate plenty of fresh nutmeg over the top and serve immediately.
