Ingredients

  • 3/8 cup Cape Cod Select premium frozen cranberries
  • 3/8 cup blueberries (fresh or frozen)
  • 2 tablespoons granulated sugar
  • 1/4 cup water
  • 1 leaf fresh basil
  • 1/4 bottle Prosecco

Instructions

  1. In a large pot, combine the cranberries, blueberries, sugar, and water. Simmer over medium heat until the sugar dissolves.
  2. Add the fresh basil to the mixture and remove from heat. Allow it to cool for a few minutes.
  3. Using a blender or immersion blender, puree the berry mixture until it becomes liquidy.
  4. Line a pie pan with parchment paper and strain the berry puree into the pan using a mesh strainer. Discard the solids.
  5. Freeze the mixture for two hours. Then, use a fork to rake the frozen parts and break up the ice. Continue to freeze for 6 hours, raking the frozen purée with a fork until it's all broken up.
  6. Scoop the cran blueberry basil granita into a champagne flute and top with Prosecco. Serve immediately.
