Ingredients
- 3/8 cup Cape Cod Select premium frozen cranberries
- 3/8 cup blueberries (fresh or frozen)
- 2 tablespoons granulated sugar
- 1/4 cup water
- 1 leaf fresh basil
- 1/4 bottle Prosecco
Instructions
- In a large pot, combine the cranberries, blueberries, sugar, and water. Simmer over medium heat until the sugar dissolves.
- Add the fresh basil to the mixture and remove from heat. Allow it to cool for a few minutes.
- Using a blender or immersion blender, puree the berry mixture until it becomes liquidy.
- Line a pie pan with parchment paper and strain the berry puree into the pan using a mesh strainer. Discard the solids.
- Freeze the mixture for two hours. Then, use a fork to rake the frozen parts and break up the ice. Continue to freeze for 6 hours, raking the frozen purée with a fork until it's all broken up.
- Scoop the cran blueberry basil granita into a champagne flute and top with Prosecco. Serve immediately.
