Ingredients
- 1/4 cup heavy cream
- 1 large egg yolk
- 1 tablespoon sugar
- 1/2 cup whole milk
- a pinch of salt
- 1 tablespoon dark rum
- a pinch of ground nutmeg, plus extra for serving
Instructions
- In a bowl, whisk together 1/4 cup heavy cream, egg yolk, and sugar until pale and well combined.
- In a saucepan, bring whole milk and salt to a simmer over medium-high heat.
- Slowly pour the simmering milk into the yolk mixture while whisking constantly to temper.
- Return the milk-yolk mixture to the saucepan and cook over medium-low heat, whisking constantly, until it reaches 160 degrees.
- Immediately pour the eggnog into a clean bowl and stir in the dark rum and nutmeg.
- Place the eggnog bowl in a larger bowl filled with ice and refrigerate until it reaches 40 degrees, stirring occasionally.
