Ingredients

  • 1/4 cup heavy cream
  • 1 large egg yolk
  • 1 tablespoon sugar
  • 1/2 cup whole milk
  • a pinch of salt
  • 1 tablespoon dark rum
  • a pinch of ground nutmeg, plus extra for serving

Instructions

  1. In a bowl, whisk together 1/4 cup heavy cream, egg yolk, and sugar until pale and well combined.
  2. In a saucepan, bring whole milk and salt to a simmer over medium-high heat.
  3. Slowly pour the simmering milk into the yolk mixture while whisking constantly to temper.
  4. Return the milk-yolk mixture to the saucepan and cook over medium-low heat, whisking constantly, until it reaches 160 degrees.
  5. Immediately pour the eggnog into a clean bowl and stir in the dark rum and nutmeg.
  6. Place the eggnog bowl in a larger bowl filled with ice and refrigerate until it reaches 40 degrees, stirring occasionally.
  7. Just before serving, whip the remaining heavy cream until soft peaks form and then whisk it into the chilled eggnog.
  8. Serve the eggnog garnished with a sprinkle of nutmeg.
