Ingredients

  • 1 (13.5 fl. oz) can of full-fat coconut milk
  • 1.50 organic egg yolks
  • 1/4 teaspoon of vanilla extract
  • 1 tablespoon organic maple syrup OR 1 tablespoon Swerve granular sugar replacement
  • 1/8 teaspoon of ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • a pinch of ground cloves
  • Splash of Rum or Brandy (optional)

Instructions

  1. Separate the eggs and set aside the egg whites for later use.
  2. In a high-speed blender, combine the coconut milk, egg yolks, vanilla extract, sweetener, and spices. Blend until smooth.
  3. Transfer the mixture to a saucepan and heat slowly over medium heat, stirring often, until the eggnog begins to thicken. Be careful not to bring it to a boil.
  4. Once the eggnog thickens, remove it from the heat and pour it into a glass container.
  5. Chill the eggnog in the refrigerator overnight.
