Ingredients
- 1 (13.5 fl. oz) can of full-fat coconut milk
- 1.50 organic egg yolks
- 1/4 teaspoon of vanilla extract
- 1 tablespoon organic maple syrup OR 1 tablespoon Swerve granular sugar replacement
- 1/8 teaspoon of ground cinnamon
- 1/8 teaspoon ground nutmeg
- a pinch of ground cloves
- Splash of Rum or Brandy (optional)
Instructions
- Separate the eggs and set aside the egg whites for later use.
- In a high-speed blender, combine the coconut milk, egg yolks, vanilla extract, sweetener, and spices. Blend until smooth.
- Transfer the mixture to a saucepan and heat slowly over medium heat, stirring often, until the eggnog begins to thicken. Be careful not to bring it to a boil.
- Once the eggnog thickens, remove it from the heat and pour it into a glass container.
- Chill the eggnog in the refrigerator overnight.
