Ingredients

  • 1/2 can (6.75 oz.) coconut milk
  • 1/3 can (4 oz.) evaporated milk
  • 1 cinnamon stick
  • 1 egg yolk
  • 1/3 can (4.67 oz.) sweetened condensed milk
  • 2 1/2 tbsp white rum or aguardiente
  • 1/2 tsp vanilla extract
  • Ground cinnamon or cinnamon stick, for garnishing (optional)
  • Toasted coconut chips or toasted shredded coconut, for garnishing (optional)

Instructions

  1. In a saucepan over medium-low heat, combine coconut milk, evaporated milk, and cinnamon stick, and bring to a simmer.
  2. Using an electric mixer, beat the egg yolk and sweetened condensed milk until thick and pale yellow. Gradually whisk in half of the hot milk mixture into the egg yolk mixture, then pour it back into the saucepan.
  3. Cook and stir constantly for 5 to 8 minutes, or until the mixture thickens and coats the back of a spoon.
  4. Remove from heat, strain the mixture through a fine-mesh sieve, and remove the cinnamon stick. Allow it to cool completely.
  5. Stir in the rum or aguardiente and vanilla extract. Cover and chill in the refrigerator for at least 6 to 8 hours, or up to 3 to 5 days.
  6. Pour into a small glass, serve, and garnish with toasted coconut and cinnamon.
