Ingredients

  • 1 1/4 oz dry gin
  • 1/2 oz lemon juice
  • 1/2 oz aquafaba
  • 3 1/3 oz raspberry rhubarb sparkling water, chilled
  • raspberries, for garnish
  • ice cubes

Instructions

  1. In a cocktail shaker, combine the dry gin, lemon juice, and aquafaba. Add ice to fill about half of the shaker.
  2. Seal the cocktail shaker and shake vigorously for about 15 seconds.
  3. Fill a Collins glass with ice and strain the gin mix into the glass.
  4. Pour the chilled raspberry rhubarb sparkling water into the glass.
  5. Thread three raspberries onto a cocktail pick and place them in the glass for garnish.
  6. Serve and enjoy!
