Ingredients

  • 1 1/2 oz. white rum
  • 1 oz. blue curaçao liqueur
  • 2 oz. pineapple juice
  • 3/4 oz. cream of coconut
  • 1 Maraschino cherry, for garnish
  • 1 Pineapple wedge, for garnish

Instructions

  1. Slice the pineapple wedge and set it aside.
  2. Warm the cream of coconut if it is chunky, then let it cool.
  3. Fill a cocktail shaker with ice.
  4. Add white rum, blue curaçao, pineapple juice, and the cooled cream of coconut.
  5. Shake the shaker vigorously for 30 seconds or until very cold.
  6. Fill a glass half full of ice.
  7. Pour the cocktail into the glass.
  8. Garnish with the pineapple wedge on the side and the cherry.
  9. Serve immediately.
