Ingredients

  • 2/3 cup blanched almonds
  • 1.50 cups granulated sugar
  • 2 tablespoons granulated sugar
  • 6 cups whole milk
  • 2 cinnamon sticks
  • 1 lemon rind
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon baking soda
  • 8 large egg yolks
  • 1 cup white rum or aguardiente

Instructions

  1. In a food processor, blend almonds with 2 tablespoons of sugar until finely ground.
  2. In a large saucepan, bring milk, cinnamon, lemon rind, vanilla, and baking soda to a boil, then simmer for 15 to 20 minutes.
  3. In a bowl, whisk egg yolks, remaining 1 1/2 cups sugar, and ground almonds until thick and pale.
  4. Remove cinnamon and lemon rind from the milk mixture, then slowly add the milk to the yolk mixture while whisking constantly.
  5. Return the mixture to the pan and cook over low heat, stirring constantly, until thick enough to coat the back of a spoon, about 5 to 7 minutes.
  6. Set aside to cool completely for about 2 hours, then stir in the rum or aguardiente. Serve chilled.
