Aperol Spritz Ice Flake
A refreshing wintry Aperol Spritz Granita with vibrant citrus flavors and a delightful icy texture.
Ingredients
- 1 tbsp sugar
- 1 tbsp water
- A pinch of kosher salt
- 1 strip Cara Cara orange zest
- 1/4 cup Cara Cara orange juice
- 1 strip clementine zest
- 2 tbsp clementine juice
- 1 sprig fresh rosemary
- 2 oz Aperol
- 3 oz Prosecco, chilled
- Orange and clementine slices, for serving
Instructions
- In a small saucepan, combine sugar, water, and salt. Bring to a boil and simmer without stirring until the sugar dissolves (2 to 3 minutes).
- Remove from heat, add orange zest and rosemary, and let the mixture cool for about 40 minutes. Strain the liquid into a large measuring cup or pitcher.
- Stir in the orange and clementine juices, as well as the Aperol. Transfer the mixture to an 8-inch-square metal baking pan, cover it, and freeze until set (about 6 hours).
- When ready to serve, use a fork to scrape the surface of the ice and create large flakes. Transfer the flakes to glasses, top with sparkling wine, and garnish with additional rosemary and citrus slices if desired.
